Lactones

Lactone is a cyclic ester – a specific type of organic compound – formed through a fascinating ring-closure reaction. It’s created when a hydroxyl group (-OH) and a carboxylic acid group within the *same* molecule react, resulting in the elimination of a water molecule (H₂O). This process effectively transforms a linear precursor into a cyclic structure containing an ester functional group. Lactones are incredibly prevalent in nature, found abundantly in various fruits and plants, contributing significantly to their characteristic aromas and flavors. Furthermore, they are increasingly utilized in the flavour and fragrance industries, providing desirable scents and tastes, and are also gaining attention for potential applications in biodegradable plastics and other sustainable materials.
